Tucked away on South Kinnickinnic Avenue in Bayview is a marvelous French boite called Pastiche. True to its name, this rustic refuge offers a seasonally changing "patchwork" menu representing the simple but robust flavors of Southern France, seasoned with the tastes of the Mediterranean. Yes, "pastiche" roughly translates "incongruous combination." Nevertheless, you can be sure there is nothing even slightly haphazard about the preparation and presentation of this eatery's table d'hote. At the culinary helm is Chef Michael Engel, who was orginally trained in classical French cuisine. However he has built his wide-spread reputation on continually refining and simplifying his cooking to better express the nature of the ingredients he uses. To this end, his menu incorporates only the best locally-sourced, artisanal ingredients, and that meticulous attention to detail is deliciously apparent in every item on the menu. To start, we recommend the Classic Onion Soup, Escargot Bourguignonne, or Frogs Legs tossed in seasoned flour and sauteed in garlic butter. After that, entree specialties include Salmon Bordelaise, Steak Frites, and Squab with Wild Mushroom Risotto. Finally, for a very sweet finale, our favorite dessert is the house-made Chocolate Crepes with Fresh Berry Compote and Creme Chantilly Chocolate Mousse, topped with fresh berry compote and a touch of port.
